Sorry for the misleading title but there is no TimTim backshooting here grins. TimTim could you tell me the banana pancake recipe you mentioned some time ago? I really can't find that thread where you wrote it, lol.

It's literally just 2 eggs and 1 banana in a blender. Then pour it onto a non-stick pan coated with butter or coconut oil and flip it when the edges turn a bit brown. I usually put some butter and/or peanut butter and/or coconut-almond butter on it. I'll make it this weekend and post pics for the non-believers. :D

Toss 1 banana in a blender.

Added heavy cream this time which you'll later see made it really difficult to flip the pancake and I do not recommend.

Also added some cinnamon to bring out the natural sweetness of the banana.

Grease your pan with either butter or coconut oil (I used the latter).

I've never had this much trouble flipping it before, so my guess is it's due to the cream. It fell apart as soon as I put the spatula beneath it lol. Usually it all stays together and looks much more like a pancake.

Doesn't matter though still delicious. I added some butter and coconut-almond butter but you could add strawberries or blueberries or something and I think it'd be pretty good.

Try blended potato in pancake mix :) ... I really need to buy a blender, haven't had a potato pancake for a few years :(

The point of the 2 egg 1 banana pancake is that it's relatively low carb. :)

Made some really good banancakes this morning. 3 eggs this time, 1 under ripe banana, 1 scoop of vegan protein powder (https://www.amazon.com/Vega-Nutritional-Shake-French-Vanilla/dp/B00AETJ18O?th=1), and unrefined coconut oil (for a slight coconut flavor). I'm not vegan but I like the vegan protein powder way better than whey. 1 scoop also only adds 4g of net carbs and includes a ton of vitamins and minerals. It also turns the banancakes green.
